Order a Quarter

To order a quarter beef is a bit different than shopping by the cut at your local meat grocer. 


Custom butcher requires that some decisions will need to be made about how to most efficiently butcher and package your quarter or side of beef; However, we have simplified the process as much as possible while still allowing you as many choices as possible.


Approximately 60% of the animal’s total weight will be its hanging weight. That means a 1200 lb steer will have a hanging weight of approximately 700 lbs total and a quarter will be approximately 175 lbs with a final yield of about 100-110 pounds of beef. The best deal is found on halves and whole beefs which we sell at $4 per pound. Quarter beefs are sold at $5 per pound. An additional $.83 per pound is butcher cost and due to the butcher on pickup. All weights and numbers are approximate. Sizes of cuts vary based on the size of the animal.

**It is very important to remember that if you want just Ground Beef, Steaks, and a few Roasts you can get that. You do not have to buy stew beef, short ribs, brisket, or anything you don't want. You do not have the ability to add additional steaks. So you can turn steaks and roast into more ground beef but not the other way around. **

WHAT IS THE HANGING WEIGHT? 

Hanging weight is the weight of the butchered animal as it hangs in the locker, and does not include the head, hide, hooves, blood and innards, which have been removed. This is the weight you will be charged on. An average quarter beef will have a hanging weight of about 175 pounds.


 HOW MUCH MEAT WILL I TAKE HOME? 

The average quarter  will yield 100-130 pounds of cut, wrapped and frozen meat. Of course, each beef will vary in size and since your beef will be custom processed to your specifications, the yield will vary slightly. That means if you have all bones removed; you will have a lower yield.


HOW MUCH FREEZER SPACE DO I NEED ? 

About 4 cubic feet. For reference, an 18 cu. ft. top freezer refrigerator has a freezer of 4 cubic feet.


WILL I GET THE FRONT OR HIND QUARTER?

We sell a mixed quarter which is half of a beef half which includes cuts from both the front and hind quarters so you get a mix of your favorite items.
